Mid-Move Salad

So we’re moving. After looking all over Vancouver we finally found the perfect place – right downstairs from where we are now. So the house is full of boxes and I’ve lost the cat several times and even though we’re not going far and neither current or future fridge is very big, I still don’t want to move anything I don’t have to. So I’ve been making things with the contents of my cupboards. Sometimes this doesn’t out all that well, as in the case of the Creme de Cacao and Vodka Vanilla shots I made for us last week (and then subsequent dentist appointments), but this salad was perfect. I think I’m going to make it again today to help with the transition out of Tales of the Cocktail week.

1 can chick peas
1/4 cup of black olives, pitted and sliced
flesh of 1 preserved lemon, cut coarsely (discard the rind)
1/4 cup of feta
2 green onions. sliced thinly
1 cup red leaf lettuce
2 TBSP citrus avocado oil, but EVOO would work just fine as well.
salt and fresh ground pepper to taste

Combine all the ingredients and then eat them.
